🥘 Ingredients

Peppers

  • 6 large bell peppers (mixed colors)
  • 2 tbsp olive oil
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1/2 cup crumbled feta cheese

Filling

  • 1/2 cup chopped Kalamata olives
  • 1/4 cup pine nuts
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste

    Preheat oven to 375°F (190°C). Cut tops off peppers and remove seeds.

    Mix rice, tomatoes, feta, olives, pine nuts, herbs, and seasonings in a bowl.

    Stuff peppers with filling and place in a baking dish. Drizzle with olive oil.

    Add 1/2 cup water to the bottom of the dish. Cover with foil and bake for 30 minutes.

    Remove foil and bake for 10 more minutes until peppers are tender and tops are lightly browned.
